26 in Uganda!

My post title seems fitting since last year, my post title was "25 in Gambia!" I'm just wondering if I will be living in a different country each year on my birthday. hmm...
My birthday was nice because Ruco and I were able to spend some time together. Ruco really tries hard to make birthdays and holidays special for me...but it's kind of hard to do much out of the ordinary here. I mean, the best meal we are going to get-no matter what, is chicken and fries if we eat out. So, that morning, he woke up and immediately starting looking up recipes in a recipe ebook we have on our computer. We found a pasta dish, and then a banana chocolate cake recipe we thought we could manage with the limited cooking supplies that are available here in Moroto. I am happy to report that the pasta was delicious..but the cake, not so much. It was hard as a rock-even immediately coming from the oven! Ruco is usually a phenomenal cook, but that day was just NOT his culinary day! :)
I was also happy to get to talk to family and friends on the phone. Even when one phone call came at 5am! Overall, it was a good day!
The rest of the week has passed by quickly, but not uneventfully! Ruco's parents and brother booked their flights to come and visit us in a couple months, and I'm really excited about that! We haven't had visitors yet in Africa, and I really could have guessed it would be my adventurous VDM family to trek to the wild west (actually east) of Uganda first!
Things have also calmed a little for Ruco! He has had time to work in his beloved garden and read a little. On the other hand, I have been working a bit more in the office, helping out where I can with finances. I think we are finally meeting each other in the middle!!
Overall, I feel blessed for all that I have experienced in the last year with Ruco. I also feel blessed for all that we have yet to experience, and all that we have to look forward to in years to come! God is so good!!!

Yay! I'm so happy you found a fun pasta recipie.. and ha ha.. funny about the cake. My friend linda and I used to say about cooking.. hmmm oh well.. we're in Japan. It's not always going to turn out the same!
I absolutely would love to talk with you soon on skype. and PS: I hope im the 2nd one to venture out and come!

Your husband is so very sweet to try and make your birthday extra special! He's so cute looking up recipes on the internet! I'm glad you had a good birthday and hopefully we'll get to celebrate your birthday together next year! YAY! =)
